- 1 large onion, finely chopped
- 2 tomatoes, finely chopped
- 2 cloves of garlic, minced
- 1 teaspoon ginger, minced
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder (adjust to your spice preference)
- Salt to taste
- Fresh cilantro leaves for garnish
Instructions:
Wash and dry the ladies finger thoroughly. Trim the ends and slice them into 1-inch pieces.
Heat 1 tablespoon of oil in a pan over medium heat. Add the sliced ladies finger and sauté them until they turn slightly crispy and start to brown. Remove them from the pan and set them aside.
In the same pan, add the remaining oil. Add cumin seeds and let them splutter.
Add the chopped onions and sauté until they turn translucent.
Stir in the minced ginger and garlic, and cook for a minute until the raw aroma disappears.
Add the chopped tomatoes and cook until they soften and become mushy.
Add the turmeric, coriander powder, red chili powder, and salt. Stir well to combine the spices with the tomato-onion mixture.
Return the sautéed ladies finger to the pan, mixing them with the tomato-onion-spice mixture. Cover and cook for 5-7 minutes until the ladies finger is tender and cooked through.
Taste and adjust the seasoning as necessary.
Garnish with fresh cilantro leaves and serve hot with roti, rice, or naan.
